Easy Blueberry Muffins {Creamy} are baked and ready for the morning! My sweeties fully subscribe to the theory that breakfast is the most important meal of the day! The last questioned asked every night is, ‘What are we having for breakfast in the morning?’ Thankfully making muffins the night before helps all of us during the morning madness of getting out the door on schooldays…and its all smiles for my Sweet B’s!

Easy Blueberry Muffins {Creamy}

Ingredients
- 4 eggs
- 2 cups white sugar
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 cups sour cream
- 2 cups blueberries
Instructions
- Preheat oven to 400 degrees.
- Grease 24 muffin cups or line with paper muffin liners.
- In large bowl beat eggs, gradually add sugar while beating.
- Continue beating while slowly pouring in oil.
- Stir in vanilla.
- In a separate bowl, stir together flour, salt and baking soda.
- Stir dry ingredients into egg mixture alternately with sour cream.
- Gently fold in blueberries.
- Scoop batter into prepared muffin cups.
- Bake in preheated oven for 20 minutes.


















Sour cream really makes them creamy. I use it in cupcakes too. Your pictures are so beautiful. It looks like I could pluck one out of the screen and get a mouth full of Delicious blueberries! Stopping by from Stephanie Lynn. Hope to see you at True Aim!
