Easy Coconut Cream Cake

Valentine’s Day is one day I prefer to eat at home.  It may be my imagination, but I’m convinced restaurants bring in extra tables and chairs to accommodate the crowds.  I personally don’t appreciate that kind of accommodation — serving fun treats at home is my idea of Valentine’s Day Fun!  Easy Coconut Cream Cake is one of my top favorite cakes ever and is the perfect Valentine’s Day dessert — really it’s a perfect any day dessert!  Every single bite is totally heavenly.   And to make it super cute, check out this fun tutorial for my Mini Heart Garland Cake Topper!

Coconut Cream Cake Recipe BarnsandNoodles

Easy Coconut Cream Cake

This is an easy recipe with fabulous results.
Ingredients
  • cake
  • 2 cups sugar
  • 1/2 cup butter, room temperature
  • 1/2 cup vegetable oil
  • 5 eggs, separated
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 cup grated coconut
  • .
  • frosting
  • 1/2 cup butter, room temperature
  • 8 ounces cream cheese, room temperature
  • 6 cups powdered sugar
  • 1 teaspoon vanilla
  • 2 tablespoons milk
  • 1 cup grated coconut, topping
Instructions
  1. Cake:
  2. Preheat oven to 350.
  3. Lightly grease and flour 3 – 8 inch cake pans.
  4. In mixer, cream sugar and butter together.
  5. Keep the mixer going and add oil and mix thoroughly.
  6. Add the egg yolks, one at a time, beating well.
  7. In a separate bowl, sift flour and baking soda together.
  8. Add flour mixture and buttermilk to the egg mixture.
  9. Mix thoroughly.
  10. Fold in the coconut.
  11. In a separate bowl use mixer to beat egg whites until stiff.
  12. Fold the egg whites into the batter.
  13. Pour batter into prepared pans.
  14. Bake for 25-30 minutes, until center is set.
  15. Remove cakes and cool on a wire cake stand.
  16. Once cool, invert each cake onto a piece of parchment paper.
  17. Set cakes aside.
  18. Frosting:
  19. Using a mixer, cream butter and cream cheese together.
  20. Add powdered sugar, vanilla, and milk.
  21. Mix well.
  22. Spread a thin layer of frosting on each layer.
  23. Stack the layers.
  24. Ice the sides of the cake with the remaining frosting.
  25. Sprinkle top of cake with coconut.
  26. Serve your amazing Coconut Cream Cake!
