Gooey Chocolate Caramel Treat

Have you ever just seen a picture of a recipe and had to make it….immediately?  It was totally that way with this yummy Gooey Chocolate Caramel Treat and it didn’t disappoint!  I love caramel….did I say that I love caramel?   You’ll see in the ingredients that the recipe not only calls for caramel squares, but also caramel ice cream topping.  Perfection!Gooey Closeup Edited

Even after cooling in the fridge for 1 hour, the caramel still manages to be Gooey…amazing!

Gooey Chocolate Caramel Fantasy

Ingredients
  • 2 cups chocolate wafer crumbs (about 40 wafers)
  • ⅓ cup melted butter
  • 30 vanilla caramels
  • ½ cup caramel ice cream topping
  • 2 cups chopped pecans
  • ¼ cup whipping cream
  • ¾ cup semisweet chocolate pieces
  • ¼ cup whipping cream
Instructions
  1. Preheat oven to 350
  2. In a medium mixing bowl stir together chocolate wafer crumbs and melted butter. Press onto the bottom of a 9 inch springform pan. Bake for 10 minutes. Cool slightly on a wire rack.
  3. In a medium saucepan melt caramels in caramel ice cream topping over low heat, stirring often. Stir in the first ¼ cup whipping cream. Remove from heat and stir in the chopped pecans. Spread over the crust. Chill for 1 hour.
  4. For topping, in a small saucepan melt chocolate over low heat. Remove from heat and stir in remaining whipping cream. Spread over caramel/pecan mixture. Cover and chill for at least 1 hour.
