Ice Cream Sandwiches Recipe

Are your kids hungry every single minute!?!?   Here’s a perfect treat to serve them and you can grab one, too because they are actually pretty low in calories and are totally tasty!  My Ice Cream Sandwiches Recipe is compliments of my sweet rancher house neighbors!  And the fun thing about them is there are tons of flavor options – explore your kid’s creativity!  The base is Cool Whip and you can add any fruit or flavoring to the cool whip before freezing it between to graham crackers!  This has been a definite hunger solution in our home this summer!  Here’s how you make them (we like to have our kids help, too).

Cool Whip Sandwiches

Total time
Serves: 12
  • 12 Graham Crackers
  • 3 cups Cool Whip, divided
  • ½ cup Chocolate Chips
  • ½ cup Chopped Strawberries
  1. Break the Graham Crackers in half
  2. Divide the Cool Whip into 3 separate cups
  3. Mix the chocolate chips with one cup Cool Whip
  4. Mix the strawberries with one cup Cool Whip
  5. Keep one cup plain Cool Whip
  6. Sandwich ¼ cup Cool Whip between two Graham Crackers
  7. Freeze for 1 hour and enjoy!
