Lemon Zest Sopapilla Cheesecake

How come almost everything tastes better when it’s homemade!?  My thought is…because you get to dream about the flavor the entire time it’s baking.  Cinnamon Sugar is incredible together, right!?!  Absolutely!  Just like crescent rolls and cream cheese are totally MFEO (made for each other)!  Lemon Zest Sopapilla Cheesecake is an incredibly easy recipe with an unbelievably good flavor.

You can try substituting the lemon zest for – chopped almonds or apples, and at times I layer the top with some fresh strawberries and sprinkle a bit more sugar or drizzle the top with honey.  And another fun variance is adding a beaten egg to the filling, resulting in a fluffier texture.

Big B is our standby kitchen helper and he did an awesome job making this batch.  He pushed the seams on the Crescent Rolls together exceptionally well and held it up and asked me to take a picture.  Ha!  He knows the drill!

We had Lemon Zest Sopapilla Cheesecake for dessert last night, after eating my crockpot chicken fajitas and believe it or not I had incredible self will and didn’t touch them until school pick up time.  I loaded them in my car and was pretty much crowned mother of the year award by Big B who’s love language is definitely food…he’s definitely a chef in training!

Lemon Zest Sopapilla Cheesecake

Recipe Type: Dessert

Serves: 6
  • 2 cans of pillsbury crescent rolls
  • 2 (8oz) packages of cream cheese (softened)
  • 1 cup sugar
  • 1 tsp vanilla
  • 1/4 cup butter (melted)
  • 1 tsp cinnamon
  • 1/2 tsp lemon juice
  • 1/2 tsp lemon rind
  1. Unroll and spread 1 can of the crescent rolls on the bottom of and ungreased 9×13 pan.
  2. Mix softened cream cheese, 3/4 of the sugar, vanilla, lemon juice, and lemon rind.
  3. Spread the mixture on top of the unrolled crescent rolls.
  4. Unroll and lay remaining crescent rolls over the cream cheese mixture.
  5. Use remaining 1/4 cup of sugar and mix with cinnamon in separate bowl.
  6. Gently spread the melted butter over the top and sprinkle the sugar/cinnamon mixture on top.
  7. Bake at 350 degrees for 20-25 minutes.
