Lime Mousse Cheesecake

I’ve been a little quiet this week, but I didn’t want you to miss out on this delicious, creamy dessert!  I made a Lime Mousse Cheesecake for our anniversary treat using my traditional mousse cheesecake recipe and adding a touch of lime to the mousse.  This is seriously the best cheesecake EVER!  If I make it too often, over the next thirteen years there will definitely be a lot more of both of us to love!

Looks like we had a color theme going — a fun anniversary treat from my sweet hubby — white tulips!  It’s such a blessing to know that through the highs and lows of life, I have my best friend by my side!  Okay, I know — enough mushiness!  Now go bake some Lime Mousse Cheesecake for your sweeties!

Lime Mousse Cheesecake

Ingredients
  • 1 1/2 cups crushed vanilla wafers (about 40 wafers)
  • 3 Tbsp butter, melted
  • 4 pkg. cream cheese, softened and divided.
  • 1 cup of sugar, divided
  • 1 Tbsp vanilla,
  • 3 eggs
  • 8 oz whipped topping, thawed
  • 2 Tbsp lime juice, divided
Instructions
  1. Heat oven to 325 .
  2. Mix wafer crumbs and butter.
  3. Press onto the bottom of a 9-inch springform pan.
  4. Beat 3 packages of cream cheese, 1 Tbsp vanilla, and 1 Tbsp lime juice, and 3/4 cup of sugar with mixer until well blended.
  5. Switch the mixer to a low speed and add the eggs one at a time until completely blended.
  6. Pour over the crust.
  7. Bake for 50 to 55 minutes or until center is almost set.
  8. Run a knife around the pan to loosen the cake.
  9. Cool completely in pan.
  10. Beat the remaining cream cheese, sugar, and lime juice with mixer until well blended.
  11. Gently mix in whipped topping and spread over the cheesecake.
  12. Refrigerate for 4 hours.
