Kid Friendly – Mini Veggie Pizza Recipe

We love trying new toppings on our Mini Veggie Pizza. Shredded and Sauteed Zucchini and Squash is our new favorite!
Shredding the veggies helps them blend with the cheese better and it also allows the veggies to saute quickly. To grate the zucchini and squash, I scrub my veggies, then use a cheese grater until I have two mounds of shredded veggies.
Heat up the oil and then cook the chopped onions until translucent. Then, add the garlic, zucchini, and squash. Cook for about five minutes, until vegetables are no longer crisp. I can’t help, but to taste at this point, the veggies absorb such a great, savory flavor!
Set the veggies aside once softened. Place thin-sliced buns coated with a bit of olive oil on oven rack and broil until lightly toasted (keep an eye on the buns, broiling is a super fast process. Remove lightly golden pizza crust from the oven and begin layering the pizza toppings…a layer of pizza sauce, a layer of veggies, and finish with a layer of mozzarella cheese and a dash of garlic salt!
Bake for 5-7 minutes until center is warm. Serve warm. Enjoy!
- 1 Small Zucchini Grated
- 1 Small Squash Grated
- ½ Onion Chopped
- ½ tsp Chopped Garlic
- 1 tsp Olive Oil
- Pizza Sauce
- Grated Mozzerella Cheese
- Dash of Garlic Salt
- Thin-Sliced Buns, split in half
- Heat pan on stove top to medium high heat and add olive oil.
- Saute onion until onion becomes opaque.
- Add garlic, grated zucchini, and squash to onion on stove top.
- Saute until softened, about 5 minutes, then set aside.
- Place thin-sliced buns coated with a bit of olive oil on oven rack and broil until lightly toasted (keep an eye on the buns, broiling is a super fast process.
- Remove lightly golden pizza crust from the oven. Set oven to 350.
- Begin layering the pizza toppings…a layer of pizza sauce, a layer of veggies, a layer of mozzarella cheese and a dash of garlic salt!
- Bake at 350 for 6-7 minutes, until cheese has melted.
- Enjoy!
