Pesto Chicken

I love easy chicken recipes that are rich in flavor!  Pesto Chicken is always a big hit in my home.  My hubby is great about heating up the grill and cooking the chicken until it’s perfectly tender.  When making Pesto Chicken, he brings it into me cooked, ready for the special toppings, pesto and mozzarella – a perfect combination, right!

Pesto Chicken

Ingredients
  • 4 skinless, boneless chicken breasts
  • 1 tablespoon olive oil
  • 3 tablespoons pesto
  • 8 thin slices mozzarella cheese

Instructions
  1. Flatten chicken slightly, or buy chicken scallopini, my favorite!
  2. Grill chicken outside, or…
  3. Saute on a skillet at medium-high heat until both sides are brown. (about 10 minutes).
  4. Transfer to a broil pan.
  5. Layer chicken with pesto and cheese.
  6. Broil until the cheese has melted.
  7. Enjoy!

  2. I’m making this tonight, butit might be on the grill pan rather than the grill. I think the wind will be blowing with another cold front approaching. Will it ever be Spring?

    Yum this looks good. I found you from Met Monday. I’m over here in Umbria Italy so I’m going to try this with fresh Mozzerella since that’s what I can get. I wonder if it will be too liquid and runny.
