Red Velvet Cupcakes with Cream Cheese Frosting

I {Heart} Cupcakes!  I love them so much…I had one for breakfast this morning.  And I’m not telling you how many Red Velvet Cupcakes with Cream Cheese Frosting I had yesterday.  Yes, I know it’s January and I should be really healthy, but Valentine’s Day is around the corner and I’m choosing to be a little more like Hobby Lobby…I’m choosing to start celebrating early!

 Here are the ingredients to make this Tasty Valentine’s Day Treat!

Red Velvet Cupcakes with Cream Cheese Frosting

Serves: 20
  • Cupcakes:
  • 2 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 oz. red food color
  • 2 tsp. vanilla extract
  • ——–
  • Vanilla Cream Cheese Frosting:
  • 1 pkg. softened cream cheese
  • 4 tbsp. softened butter
  • 2 tbsp. sour cream
  • 2 tsp. vanilla extract
  • 2 cups powdered sugar
  1. Red Velvet Cupcakes:
  2. Preheat oven to 350 degrees.
  3. Mix the flour, cocoa powder, baking soda, and salt.
  4. In a separate bowl, beat the butter and sugar for about 5 minutes on a medium speed or until light and fluffy.
  5. Beat in the eggs, one at a time.
  6. Then mix in your sour cream, milk, food color, and vanilla.
  7. Slowly beat in flour mixture on low speed.
  8. Fill each paper liner 2/3 full.
  9. Bake at 350 for 20-25 minutes.
  10. Remove from pans and let cool completely before frosting.

  12. Vanilla Cream Cheese Frosting:
  13. Beat cream cheese, softened butter, vanilla, and sour cream until light and fluffy.
  14. Slowly beat in 2 cups of powdered sugar until smooth.
